I took a similar approach to preparing Aldi Thai Style Curry Chicken Stir Fry Kit as the Kung Pao Chicken Kit (read about that here) where I added some fresh peppers and onions and I added the rice to the pan with some water to steam off rather than cooking in the microwave. 

My verdict on the Thai Style Curry Chicken is basically the same as the Kung Pao Chicken. It was tasty. I loved the little coconut topping. But I can easily make something just as good or better with some curry paste and a can of coconut milk and call it a day for less $$ and a much shorter ingredients list.

Really curious to try coconut milk powder. Would be a great shelf-stable option, reduces waste, and is actually more pure than most coconut milk in a can which has thickeners/stabilizers!
